The menu focuses entirely on meats prepared over an open flame using a charcoal grill, wood-burning oven and a Grillworks Infierno, a versatile grill that also serves as a hearth, smoker, broiler and more. Colicchio uses a variety of specialized cooking methods when preparing the restaurant's antibiotic-free meats, including Brandt Beef and Snake River Farms, which he sources from ranchers across the United States. Dishes include a New York Strip Steak with Pepper Chutney Bordelaise and Duck Breast with Duck Chorizo and Smoked Peaches along with a robust selection of seasonal side dishes to accompany menu selections.
Originally from Elizabeth, New Jersey, Tom Colicchio is the chef and owner of Craft, Craftbar, wichcraft, Colicchio & Sons and Riverpark in New York, Craft and Craftbar in Los Angeles, Craftsteak at the MGM Grand Las Vegas and Craftsteak at the MGM Grand Foxwoods. He was the co-founder of Gramercy Tavern, along with Danny Meyer. Most recently, he opened Topping Rose House, the inn and restaurant he is operating in Bridgehampton, New York. Colicchio has been recognized by the James Beard Foundation throughout his career and earned the "Outstanding Chef" award in 2010, the culmination of his 30 years of hard work in the restaurant industry. He has published three cookbooks and is the head judge of the Emmy-winning culinary series Top Chef, which premieres the 11th season this fall. Colicchio also appears in and serves as executive producer on A Place at the Table, Participant Media's documentary about food insecurity in America, produced and directed by Kristi Jacobson and Colicchio's wife, Lori Silverbush. A Place at the Table was released by Magnolia Pictures earlier this year. Giving back to the community is also important to Colicchio, and he supports charities including Children of Bellevue, City Harvest, Alex's Lemonade Foundation, United Way of New York and Food Bank for New York City.
